1 medium onion
1 bulb garlic
1 thumb-size ginger
3 pcs bay leaf
1 tbsp fish sauce
1 cup water
4 finger chilies

1/4 cup pork intestine
1/4 cup pork flower

In a bowl, combine pig's blood and about 2 tablespoons of vinegar. Stir well.

In a pot over medium heat, heat oil. Add onions, garlic, and ginger and cook until lightly browned.

Add pork meat and innards and cook, stirring occasionally until lightly browned and crispy. Add black pepper while stirring.

Add bay leaf and simmer for 2 minutes. Add little water and reduce heat when pork blood is about to mix.

Add pork blood, stirring to disperse and avoid lumps.

Add fish sauce, vinegar and salt, and bring to boil. In medium flame, cook uncovered and without stirring for about 30 minutes or until pork is tender.

Add long green chilies and simmer for 3 minutes. Remove on flame.

Serve hot with rice or puto.
