1 pound sea bass fillet, skin, bones, and bloodline removed, cubed into small pieces
1 pound peeled and deveined shrimp, cut into bite-sized pieces

1 cup fresh lime juice, strained
¼ medium red onion, thinly sliced
2 garlic cloves, minced
1 habanero chile, seeded (jalapeno)
1 tablespoon minced ginger
1 tablespoon agave nectar
¼ cup coarsely chopped fresh cilantro
1 cup heirloom tomatoes, diced
½ cup fresh-squeezed orange juice, strained
Cilantro, for garnish
Limes, quartered, for garnish
Tortilla/corn chips, for serving
Avocado, halved, for serving

Into a bowl, place the cubed pieces of sea bass and shrimp, toss with salt, pepper, and lime juice. Set aside in the fridge to “cook” the raw seafood for at least 4 hours, overnight, or until opaque and firm.

Combine the red onion, tomato, ginger, garlic, habanero, cilantro and orange juice in a bowl and let set until the seafood is “cooked” and opaque.

Toss the shrimp and sea bass in with the vegetables, and mix together.
