Cultural Context

Samosas trace their origins to the Middle East, likely arriving in India via trade routes during the 13th century. They became a popular snack in Indian cuisine, often enjoyed during festivals and gatherings. Traditionally filled with spiced potatoes and peas, samosas symbolize hospitality and are a staple at celebrations. Today, they have gained global popularity, with variations appearing in many cultures, including meat-filled and baked versions.

1

In a mixing bowl, combine 3 cups of flour, 1 teaspoon baking powder, 1 teaspoon salt, and 3 tablespoons of extra virgin olive oil.

2

Gradually add 3/4 cup of water and mix until a soft, pliant dough forms.

3

Cover the dough and let it rest for about 30 minutes.

4

Cube potatoes and place them in a pot, covering them with water. Boil until soft.

5

In a separate pan, heat a couple of tablespoons of extra virgin olive oil and add 1 cup of diced onion, 2 cloves of minced garlic, and 1 teaspoon of fresh grated ginger. Sauté until fragrant.

6

Add cumin and peas to the onion mixture and stir.

7

For the cilantro chutney, blend cilantro, garlic, cumin, juice of 1 lime, salt, 1/4 cup of extra virgin olive oil, and 2 tablespoons of water until smooth.

8

Once the potatoes are soft, mash them and mix with the sautéed onion mixture.

9

Roll out the dough to about 1/8 inch thick, then cut into pieces.

10

Place 2 tablespoons of filling in the center of each piece, fold, and crimp the edges to seal.
