1/2 tablespoon finely chopped ginger
2 teaspoons crushed kasuri methi
1 teaspoon red chili powder
1/2 teaspoon turmeric powder
1 teaspoon coriander powder
1/4 teaspoon cumin powder
1/4 teaspoon garam masala
1/2 teaspoon chaat masala
1 teaspoon ajwain (carom seeds)

In a bowl, add 2 cups of whole wheat flour and 1/2 cup of yogurt.

Add 1 tablespoon of oil and 1/2 tablespoon of salt, mix well.

Gradually add water until the dough is soft, then cover and let it rest for 10 minutes.

For the stuffing, take a bowl and add 2 cups of finely chopped onions and 1 tablespoon of salt, mix well to release water.

Add 1/2 cup of crushed poha to absorb moisture from the onions.

Then, add 1 tablespoon of finely chopped green chilies, 1/2 tablespoon of finely chopped garlic, and 1/2 tablespoon of finely chopped ginger.

Next, add 2 teaspoons of crushed kasuri methi, 1 teaspoon of red chili powder, 1/2 teaspoon of turmeric powder, 1 teaspoon of coriander powder, 1/4 teaspoon of cumin powder, 1/4 teaspoon of garam masala, and 1/2 teaspoon of chaat masala, along with 1 teaspoon of ajwain.

Mix everything well to form the stuffing mixture.

Divide the dough into equal portions and shape each portion into a bowl.

Fill each bowl with the stuffing and seal it tightly.

Roll the stuffed dough into a flat circle, optionally adding onion seeds and coriander on top while rolling.

Heat a pan and spread some oil, then cook the rolled paratha on both sides until golden brown, adding butter if desired.
