Haitian Epis

Cultural Context

Epis is a vibrant Haitian seasoning blend that forms the backbone of many dishes in Haitian cuisine. Traditionally made with fresh herbs and vegetables, it embodies the island's rich flavors and culinary heritage. Often used as a marinade or base for stews, epis has gained popularity beyond Haiti, inspiring variations in Caribbean cooking.

Welcome to my YouTube channel. Today we're making Haitian epis.

2

Gather ingredients: 2 onions, 2 chicken bouillon cubes, 1 full head of garlic, fresh thyme, 4 stalks of scallion, Italian parsley, cilantro, 1 large green pepper, 1 large red pepper, and 1 scotch bonnet pepper (optional).

3

Chop all ingredients. Note: Keep onions in a separate bowl to avoid eye irritation.

4

Place chopped ingredients into a blender or food processor.

5

Crumble the chicken bouillon cubes before adding to the blender.

6

Add 2 tablespoons of olive oil (or 4 half-tablespoons).

7

Add 0.5 tablespoons of adobo.

8

Add 1 tablespoon of lemon juice for preservation (optional).

9

Add 150 ml of water to the blender.

10

Blend all ingredients together until smooth, approximately 1 minute.

11

Pour the blended seasoning into mason jars, yielding about three small jars.
