Lamb Soup

1 lb lamb shoulder, cut into cubes
4 cups water
2 medium onions, chopped
2 carrots, diced
2 potatoes, diced
2 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1 tsp dried thyme
1 bay leaf
1/2 cup fresh parsley, chopped

In a large pot, add the lamb cubes and water. Bring to a boil over medium heat.

Skim off any foam that rises to the surface.

Add the chopped onions, carrots, potatoes, garlic, salt, pepper, thyme, and bay leaf to the pot.

Reduce the heat to low and cover the pot. Let it simmer for about 1.5 to 2 hours, or until the lamb is tender.

Check occasionally and add more water if necessary to keep the soup at your desired consistency.

Once the lamb is tender, remove the bay leaf and stir in the fresh parsley.

Taste and adjust seasoning if needed.

Serve hot, garnished with additional parsley if desired.
