Prepare a soufflé cup by coating it with 2 tablespoons of soft butter, ensuring to cover the bottom and sides.
Dust the buttered cup with sugar by rolling it around until nicely coated.
In a mixing bowl, combine 1 tablespoon of flour, a pinch of salt, 1 tablespoon of cocoa powder, and 2 tablespoons of sugar.
Add 1 teaspoon of vanilla extract and 1/2 cup of milk to the dry ingredients and mix until smooth.
Melt 4 ounces of dark chocolate in a saucepan, ensuring to add a little fat to help it melt smoothly.
Once melted, remove from heat and let cool slightly before adding the egg yolks, mixing well.
Grate the zest of half an orange into the chocolate mixture for added flavor.
Optionally, add a little bit of Grand Marnier to the mixture.
In a separate bowl, whip the egg whites until soft peaks form, gradually adding 3 tablespoons of sugar until incorporated.
Ensure the egg whites do not have any yolk in them for proper whipping.
Once soft peaks are achieved, gently fold the egg whites into the chocolate mixture, being careful not to deflate the mixture.
Pour the batter into the prepared soufflé cup, filling it about three-quarters full.
Bake in a preheated oven until puffed and set, about 12-15 minutes.
