Icelandic Flatbread

Cultural Context

Icelandic flatbread, known as 'flatkaka', has been a staple in Icelandic cuisine for centuries, traditionally made with simple ingredients like flour and water. This flatbread is often enjoyed with butter, cheese, or smoked fish, reflecting the island's reliance on both agriculture and fishing. Today, it remains a beloved part of Icelandic culture, often served during special occasions and family gatherings.

half a teaspoon baking powder
half a teaspoon salt
250 to 300 ml boiling water

Gradually add the boiling water until it is possible to knead a ball of dough that is smooth and void of cracks but doesn't stick to the counter.

3

Knead the dough firmly and then divide it into pieces.

4

Roll out the pieces to about 3 mm thick.

5

Bake each cake at a high temperature either directly on a hot plate or in a thick-bottomed iron pan until there are black spots on the side facing down.

6

Flip the cake and bake it on the other side.

7

As soon as the cakes are removed from the pan or hot plate, stack them quickly under a towel to prevent them from drying and hardening.
