Heat 320 ml of milk to around 100°F in the microwave.

Add 20 g of instant yeast to the milk and stir, then let it rest for 5 to 10 minutes until the yeast activates.

In a bowl, combine 600 g of flour, 100 g of sugar, and 12 g of salt, mixing with your hands until combined.

Peel and chop 8 russet potatoes into small chunks.

After about 7 minutes, check the yeast mixture; it should be active and bubbly.

Pour the yeast and milk mixture into the dry ingredients, then add 1 stick of melted butter and 2 beaten eggs.

Mix everything together for about 3 to 4 minutes until it forms a sticky dough, then let it rest for 30 minutes.

While the dough rests, add the potatoes to a saucepan, cover with water, and add a sprinkle of salt. Boil until fork-tender.

Once the potatoes are cooked, drain them and mash them in the saucepan, then mix in 1/2 cup each of mild cheddar and Monterey Jack cheese, adding salt to taste.

Flour a surface and knead the dough for about 10 minutes until smooth, then place it in a bowl and cover with Saran Wrap to let it rise for 45 minutes to an hour.

After the dough has risen, punch it down and divide it into two chunks.

Flatten one chunk of dough and place half of the potato and cheese mixture in the center, crimping the edges to seal it.

Let the filled dough rise for at least 30 minutes under a tea towel.

With the other chunk of dough, flatten it out and cut into rolls, letting them rise for 20 minutes under a tea towel.
