Boil 5 medium sized potatoes in a pot for about 20 minutes until fork tender. Remove from the water and let cool.

Grate/mash the potatoes until soft and smooth with no lumps.

In a large frying pan over medium heat, add 1 Tbsp of oil. Sauté 3 chopped green onions and 1 Tbsp chopped jalapeño for 1-2 minutes. Turn off heat and let cool.

To the mashed potatoes, add 1 cup chopped cilantro, sautéed green onion mixture, 1 tsp coriander powder, 1 tsp red chili flakes, 1/2 tsp black pepper powder, and salt to taste. Mix well to combine all ingredients.

Take 1-2 Tbsp of the potato mixture to form 1-inch sized balls. Place 1 ball of potato mixture on a tortilla and spread evenly on one side.

In a frying pan over medium-high heat, add 1 Tbsp oil and heat.

Place your potato-covered tortillas into the hot pan, mixture side face down. Once they are easy to move around and do not stick (about 3-4 minutes), check for a golden-brown sear and flip.

Cook for 2 more minutes on the other side.

Transfer Bolani Tacos to a serving plate after cooking.
