Vietnamese Summer Rolls
Cultural Context
Originating from Vietnam, summer rolls, or 'gỏi cuốn', are a beloved street food that embodies freshness and balance. Traditionally filled with shrimp, herbs, and vermicelli, they are often served with a rich peanut sauce. Today, these rolls have gained popularity worldwide, with many variations incorporating different proteins and vegetables.
Quantities are estimated based on standard recipes for your convenience. The actual ingredients used in this video are accurate.
Prep the vegetables by cutting cucumber, red pepper, and carrot into matchsticks.
Juice limes using hands or a fork, adding a couple of tablespoons of palm sugar and fish sauce to taste.
Melt palm sugar in lime juice and fish sauce, adding water and finely chopped chili and garlic.
Soak rice paper in cold water to soften it for rolling.
Layer fresh herbs, cucumber, carrot, red pepper, lettuce, and mung bean vermicelli on the rice paper.
Add prawns or lemongrass beef if desired, then fold the rice paper over the filling and roll tightly.
Serve the summer rolls cut in half to showcase the colorful filling.
