Portuguese Bifanas

Bifanas are a beloved street food in Portugal, originating from the Alentejo region. Traditionally made with marinated pork, they are served in a crusty roll, often enjoyed with mustard and pickled vegetables. This dish reflects the simplicity and heartiness of Portuguese cuisine, making it a popular choice for lunch or a quick snack. Today, bifanas can be found in various forms across Portugal and have gained recognition internationally, often celebrated for their bold flavors and satisfying texture.

Turkey breast is leaner, while pork shoulder is more affordable.

Marinate pork loin in garlic, paprika, white wine, olive oil, bay leaves, salt, and black pepper for at least 2 hours.
Heat a grill or skillet over medium-high heat.
Remove pork from marinade and discard the marinade.
Grill or pan-fry pork for about 4-5 minutes per side until cooked through and golden brown.
Let the pork rest for a few minutes before slicing.
Slice the pork thinly against the grain.
Toast crusty bread until golden brown.
Spread mustard on the inside of the bread.
Layer sliced pork on the bread.
Top with pickled vegetables and onions as desired.
Sprinkle with parsley before serving.
