Prepare the marinade by mixing 2 heads of garlic (or 2 tablespoons of minced garlic), 1.5 tablespoons of oregano, 1.5 tablespoons of salt, 1 tablespoon of cumin, 1 teaspoon of black pepper, and 1.5 tablespoons of mustard, along with 4 tablespoons of achote.

Remove the skin from the pork and make cuts in the meat to allow the marinade to penetrate.

Rub the marinade all over the pork, avoiding the skin, and season the skin with achote and salt.

Cover the marinated pork and let it sit overnight.

Preheat the oven to 400°F (200°C).

Pour 1.5 beers over the pork and cover it with aluminum foil.

Place the pork in the oven and cook for approximately 6 hours, checking periodically to ensure the beer doesn't evaporate. Add more beer if necessary.

After 5 hours and 20 minutes, remove the aluminum foil and brush achote on the skin.

Return the pork to the oven to continue cooking until the skin is crispy.
