Lobia Masala

2 cups of black eyed beans
1/2 tsp turmeric powder
1 tsp of chilli powder
5-6 cloves of garlic
1 inch ginger
1 large onion (roughly chopped)
2 green chillies (chopped)
Handful of coconut (creamed/coconut milk)

Soak 2 cups of black eyed beans overnight.

Blend the garlic, ginger, and onion together.

Heat oil in a vessel, add the blended paste, and sauté for some time.

Add the soaked beans, powdered spices, and salt.

Let it cook for 10-15 minutes or until beans are soft.

Finally, add the creamed coconut and let it simmer for 5 more minutes.

Adjust salt, let it cook for a few more minutes, and it’s ready to be served.

Garnish with freshly chopped coriander or green chillies and serve.
