Lobia Masala

1 tomato
5 garlic cloves

5 dry chilli
2 teaspoon coriander seeds
½ teaspoon fennel seeds
½ teaspoon cumin seeds
1 big size onion
salt
turmeric powder
¼ teaspoon garam masala
200 grams overnight soaked lobia (Karamani)
coriander leaves

Heat oil in a pan.

Add chopped onion and sauté until golden brown.

Add minced garlic, ginger, and dry chillies; sauté for a few minutes.

Add chopped tomato and cook until soft.

Stir in coriander seeds, fennel seeds, cumin seeds, turmeric powder, and salt; cook for a few minutes.

Add the soaked lobia and mix well.

Pour in water to cover the lobia and bring to a boil.

Reduce heat and simmer until lobia is cooked through.

Add garam masala and chopped coriander leaves before serving.
