Separate the egg yolks from the egg whites.

Beat the egg yolks using a mixer, add a pinch of salt and a pinch of sugar. Slowly add the milk and the flour.

In a separate bowl beat the egg whites at low speed until they become stiff. Add one tablespoon of vanilla sugar.

Add the egg whites to the egg yolks.

Let it rest for 30 minutes.

Melt 1 tbsp butter in the pan.

Pour 1/3 of the mixture and spread evenly in the pan. Reduce the heat to medium-low.

Once it's ready on the bottom flip over with spatula (about 2 minutes) on each side).

Break the pancake in smaller pieces as shown in the video and sprinkle it with 1 spoon of sugar.

Stir from time to time until the sugar is caramelized.

Put in a plate and garnish with powdered sugar, honey, chocolate or jam. You can also use cheese if you prefer salty pancakes.
