1

Prepare the dough by mixing all-purpose flour, sugar, unsalted butter, and salt in a bowl.

2

Add very cold water gradually to form a smooth dough, adjusting the amount as needed.

3

Wrap the dough in plastic wrap and refrigerate for 30 minutes.

4

In a skillet, heat cooking oil over medium heat and sauté chopped onion, ginger, and garlic until translucent.

5

Add ground beef to the skillet and cook until browned, breaking it apart as it cooks.

6

Stir in curry powder, cumin, and chicken seasoning; add slurry for thickening.

7

Remove from heat and let cool.

8

Preheat the oven to 375°F (190°C).

9

Roll out the chilled dough on a floured surface to about 1/8 inch thick.

10

Cut out circles of dough to form the pie base and top.

11

Place a spoonful of the meat filling in the center of each dough circle.

12

Fold the dough over the filling to create a half-moon shape and seal the edges with a fork.

13

Beat an egg and mix with milk or butter to create an egg wash; brush it over the top of each pie for a golden finish.

14

Arrange the meat pies on a baking sheet lined with parchment paper.

15

Bake in the preheated oven for 25-30 minutes or until golden brown.
