Malaysian Style Vegan Claypot Rice

380ml water
handful dried sliced mushrooms
2 vegan sausage
4 tofu puff
50g choy sum
1 tbsp soy sauce
1 tsp sesame oil
1 tsp shallot oil
1 tsp sugar
1/4 tsp white pepper
1/4 tsp dark soy sauce
2 tbsp oil
1 thumb size ginger
1 medium onion
2 cloves garlic
1/4 cup reserved mushrooms soaking water

Soak the dried mushrooms and reserve the soaking water.

Rinse the rice a few times and drain. Then soak the rice for 30 minutes before cooking.

Drain and place the soaked rice into the claypot, add in 380ml water. Cook over low heat till the water is absorbed.

Meanwhile, heat 2 tbsp oil. Sauté the ginger, garlic, and onion till fragrant. Add in the vegan sausage, tofu puff, and mushrooms.

Stir fry till everything is well combined. Then add in 1/4 cup of the reserved mushrooms water, cook another 1-2 minutes.

Remove from the heat and place the cooked ingredients over the claypot rice. Cover and cook over low heat for about 5 minutes.

Remove from the heat and pour 1 tsp of sesame oil and soy sauce over the rice and mix well. Serve immediately and enjoy.
