Prepare 4 beef schnitzels, ensuring they are large and thin.
Season the schnitzels with salt and pepper on one side.
Spread mustard evenly over the seasoned side of the schnitzels.
Lay 2 slices of bacon on each schnitzel, followed by strips of pickles and carrots.
Roll each schnitzel tightly and secure with toothpicks or kitchen twine.
Prepare a mixture of 1/2 teaspoon paprika powder and 2 tablespoons oil, and brush it over the outside of the rolls.
Set the rolls aside and prepare the sauce.
Chop 1 onion and sauté it with 70 grams of butter in a Thermomix for 3 minutes at 120 degrees on speed 1.
Add 125 grams of red wine and 600 grams of water to the sautéed onion.
Incorporate 10 grams of honey, 20 grams of tomato paste, and season with salt and pepper.
Add a good quality gravy mix or meat broth seasoning to the mixture.
Place the beef rolls into the sauce and cook for 70 minutes in the Thermomix.
