Mix flour, water, and yeast in a bowl until a dough forms.
Knead the dough on a floured surface until smooth, about 10 minutes.
Cover the dough with a cloth and let it rise in a warm place until doubled, about 1 hour.
Divide the dough into balls and flatten each ball into a disc.
Heat a large pot of water until boiling.
Carefully place the discs into the boiling water and cook until they float, about 5 minutes.
Remove the discs and let them drain on a towel.
In a pan, heat vegetable oil over medium heat until shimmering.
Sauté onions and garlic until translucent, about 3-4 minutes.
Add chopped tomatoes and spices, cooking until fragrant, about 2-3 minutes.
Incorporate cooked meat or vegetables into the sauce, stirring to combine.
Serve the Kosta topped with the sauce and garnish with fresh herbs.
