5 red chilies 130g, cut into slices
2 onions medium-sized, cut into chunks
8 garlic cloves, bashed
1 tsp turmeric powder
1 lemongrass, remove both ends, cut into slices
1 inch galangal, cut into slices
3 tbsp dried shrimp, soaked
1/2 cup water
500g sweet potatoes
4 tbsp vegetable oil
2 tbsp curry powder
2 tbsp taucu
2 tbsp sugar
1 tsp salt
3 cups of stock
500g yellow noodles
60g bean sprouts
3 hard-boiled egg
120g firm tofu
3 tbsp fried shallots
coriander leaves
sliced green chilies
lime wedges

Add all the Ingredients A into the electric blender or food processor to blend them into a smooth chili paste.

Peel and cut the sweet potatoes into pieces of one to two inches. Then, place them in a steamer for about 20 minutes or until tender. Blend it in an electric blender with some stock until it becomes a smooth paste.

Heat the oil in a pan and add the blended Ingredients A. Cook until the liquid evaporates and the aroma fills the air.

Mix in the mashed sweet potatoes and stir well with the spice paste.

Pour chicken or beef broth and season with curry powder, fermented soybean paste (taucu), sugar, and salt. The gravy is ready.

Blanch the noodles and bean sprouts from boiling water and put them into the bowl.

Then, pour a generous amount of the mee rebus gravy over the noodles.

Lastly, garnish with coriander leaves, sliced green chilies, and lime wedges. Add a squeeze of lime juice before serving.
