Start by dry roasting the nuts (almonds, cashews, pistachios) in a pan for about 2 minutes until they are warm and their moisture is removed, but do not brown them.
Take a bowl and sift in ½ cup of besan (gram flour).
In the same bowl, add ½ cup of semolina.
Add ½ cup of sugar to the bowl.
Add water to the mixture according to the consistency needed, using the same ½ cup measurement.
Melt some ghee in a pan until it is liquid, approximately 2 tablespoons, and add it to the mixture.
Mix the dry ingredients and melted ghee together using your fingers to ensure it binds well.
If the mixture does not hold shape when formed into laddoos, add more ghee as needed, about 1-2 teaspoons at a time.
Once the mixture is ready, take small portions and shape them into round laddoos, pressing firmly to hold their shape.
Place the laddoos on a plate and allow them to cool completely before storing.
