Okongobong

Wash the okamobong leaves under running cold water, pressing them down to ensure they are submerged.

Allow the leaves to sit in the water for a while, then shake and let the sand settle at the bottom.

Carefully lift the leaves from the water, avoiding the sand at the bottom, and repeat the washing process until the leaves are sand-free.

Run the kanwa (lime stone) through a sieve after soaking it in water to remove any stones or sand.

Add the sieved kanwa to boiling water to soften it slightly, then add the washed okamobong leaves to the boiling water.

Leave the leaves in the boiling water for 5-10 minutes, then take them out and run cold water over them to stop the cooking process.

In a separate pot, boil the kanda and meat with half of the spices (ginger, garlic, white pepper, bush pepper, seasoning cubes, and salt).

After boiling the meat for over 20 minutes, add the egusi seeds and a little water, allowing it to cook for 20-30 minutes.

Add the remaining spices to the egusi mixture, along with more water, and cook for an additional 10 minutes while stirring to prevent burning.

Check for doneness by looking for oil on the surface of the pot; if it appears, the egusi is ready to incorporate the vegetable.

Add the washed okamobong leaves to the egusi mixture gradually, ensuring not to overwhelm the pot with too much vegetable.
