Boil water in a large pot over medium heat until bubbling.
Gradually add maize meal to the boiling water while stirring continuously to prevent lumps.
Cook the mixture, stirring frequently, until it thickens and pulls away from the sides of the pot, about 10-15 minutes.
In a separate pot, heat cooking oil over medium heat.
Sauté chopped onions until translucent, about 3-4 minutes.
Add minced garlic and ginger; cook for another 1-2 minutes until fragrant.
Stir in diced tomatoes and chopped green bell peppers; cook until softened, about 5 minutes.
Add beef pieces to the pot; brown on all sides for about 5-7 minutes.
Pour in beef stock and season with salt, black pepper, and coriander; bring to a simmer.
Cover and cook until beef is tender, about 45 minutes to 1 hour, adding water as needed.
In the last 10 minutes, stir in chopped carrots and spinach for added nutrition.
Serve hot sadza alongside the beef stew.
