  • 1 cup chickpea flour

  • 1/4 tsp salt
  • 1/4 cup coconut oil, melted
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips

Instructions

  1. 1Preheat your oven to 350°F (175°C).
  2. 2In a mixing bowl, combine the chickpea flour, baking soda, and salt. Mix well.
  3. 3In another bowl, whisk together the melted coconut oil, brown sugar, maple syrup, and vanilla extract until smooth.
  4. 4Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. 5Fold in the chocolate chips until evenly distributed.
  6. 6Scoop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  7. 7Flatten each cookie slightly with the back of a spoon.
  8. 8Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
