Peel and cut the yam into thick slices.
Place the yam slices in a pot and cover with water.
Add a pinch of salt and bring to a boil over medium heat.
Cook until the yam is tender, about 15-20 minutes.
While the yam cooks, heat vegetable oil in a pan over medium heat.
Add chopped onions and sauté until translucent, about 3-4 minutes.
Stir in minced garlic and ginger, cooking until fragrant, about 1 minute.
Add chopped bell pepper, carrot, and green beans; sauté for 5-7 minutes until tender.
Incorporate chopped tomatoes and scotch bonnet pepper; cook until tomatoes break down, about 5 minutes.
Season the sauce with salt, black pepper, and seasoning cubes to taste.
Add spinach and cook until wilted, about 2 minutes.
Remove the yam from heat and drain any excess water.
Serve the boiled yam with the vegetable sauce poured on top.
