Clean and cut the tomatoes, bell peppers, and onions.
Cut the yams into reasonable sizes and place them in water to prevent browning.
Add vegetable oil to a pot and heat it.
Fry the onions in the hot oil for about 1 minute 30 seconds.
Add thyme, curry powder, and blended ginger-garlic-onion paste; fry for 30 seconds.
Add chopped tomatoes and fry until oil settles at the top, about 20-25 minutes.
Boil the yams in a pot with salt for 15-20 minutes, checking for doneness.
Once the tomatoes are ready, add salt and Maggi seasoning, and let it simmer for 30 seconds before adding the eggs.
Whip the eggs with a little salt and add them to the pot without stirring for 1 minute.
Stir the eggs after 1 minute, then add parsley, green onions, chopped pepper, and bell peppers.
Add fried pork (optional) and stir everything together, letting it simmer for another 4 minutes.
