In a large bowl, combine 90 grams (3/4 cup) of unbleached white flour, 3 tablespoons (20 grams) of coconut flour, 4 tablespoons of baking powder, and 1/2 teaspoon (2 grams) of psyllium husk. Mix the dry ingredients together.

Add 140 grams of non-fat Greek yogurt to the dry mixture, ensuring to use the thick part and not the watery part. Mix until a dough forms.

Knead the dough for about 4 minutes until it feels soft and stretchy, performing a total of 66 kneading motions (33 back and forth).

Divide the dough into two equal-sized balls.

Roll each ball into a log about 2 feet long. Shape the log into a U-shape, cross the ends to form an X, and then flip the middle part to the bottom, pressing down to secure.

Prepare a boiling solution by bringing 4.5 cups of water to a boil and adding 4 tablespoons of baking soda. Ensure the baking soda is fully dissolved.

Boil each pretzel in the baking soda water for 20 seconds, then transfer to a piece of foil.

Optionally, sprinkle sesame seeds on top of the wet pretzel before baking or air frying.

Bake in the oven at 400 degrees Fahrenheit for 12-15 minutes or air fry at 350 degrees Fahrenheit for 8-10 minutes, spraying with oil before cooking.
