Bring to a boil, then reduce heat and simmer for 1.5-2 hours until beef is tender.
Add diced potatoes and cook for an additional 20-30 minutes until potatoes are fork-tender.
Remove bay leaves and adjust seasoning as needed.
Garnish with chopped parsley before serving.
