Gluten Free Banana Muffins

3 ripe bananas
3 tablespoons honey
1/4 cup sugar (optional)
1 teaspoon baking soda
1 teaspoon baking powder
1/4 cup melted butter
1.5 cups flour
1/2 cup almond flour
1/2 cup oatmeal flour
1/2 cup gluten-free flour (or coconut flour)

Peel the bananas and place them into a large mixing bowl.

Mash the bananas with a fork until smooth, leaving some chunks for texture.

Add 3 tablespoons of honey (or 1/4 cup of sugar if bananas are not very ripe) to the mashed bananas.

Mix the wet ingredients until well combined.

Add 1 teaspoon of baking soda and 1 teaspoon of baking powder to the mixture.

Add 1/4 cup of melted butter to the mixture.

Stir in 1.5 cups of flour, using a combination of 1/2 cup almond flour, 1/2 cup oatmeal flour, and 1/2 cup gluten-free flour (or substitute with coconut flour).

Add chocolate chips or any other desired toppings to the batter.

Line a muffin pan with paper liners and distribute the batter evenly among the 12 slots.

Preheat the oven to 350 degrees Fahrenheit.

Bake the muffins for 10 to 15 minutes, until golden brown on top and a toothpick comes out clean.
