Gluten Free Banana Muffins

Preheat the oven to 375°F.

Squash 2 or 3 bananas in a bowl until they are not totally mashed but just smashed.

Add honey to the smashed bananas and mix them together.

Melt some butter and add it to the banana and honey mixture.

Crack 2 eggs into the mixture for binding and flavor, and mix well until lump-free.

In a separate bowl, combine the wet mixture with the dry ingredients, making a hole in the center to fold it through.

Add almond milk and a little bit of baking powder to the mixture and fold until combined, retaining some air.

Prepare silicone muffin molds and fill them up to the top, aiming for about 6 to 7 muffins depending on moisture content and egg size.

Place the filled molds in the oven and bake for 15 minutes at 375°F.
