Today, it remains a festive favorite, often served at special occasions and gatherings, and has inspired variations across Central Europe.

Season beef with salt and black pepper; spread flour on one side.
Heat a pan with butter until hot.
Add the seasoned beef to the hot pan and brown on both sides.
Remove the beef and set aside in a bowl.
Chop onions and add to the hot pan; sauté for 2-3 minutes.
Add more butter and beef stock to the pan; bring to a boil.
Place the beef back in the pan and cover with the liquid.
Preheat the grill to 160°C (320°F).
Transfer the beef and sauce to the grill and braise for 90-100 minutes.
Prepare topping by chopping carrots, leek, and celery root; sauté with bacon in butter until lightly cooked.
Add a dash of beef stock to the veggie mixture and simmer for 5 minutes on low heat.
After braising, mix heavy cream, mustard, lemon zest, and chopped capers into the sauce.
Season the sauce with salt and pepper; return the beef to the sauce and grill for another hour.
Plate the beef, top with the bacon veggie mixture, and sprinkle with parsley.
