Lemon juice provides a similar tartness, and vinegar can be a cost-effective substitute.

Boil half a pot of water in a medium-sized pot.

Add 12 cloves to the boiling water.

Grate a handful of ginger and add it to the pot.

Add 100g of dried sorrel to the pot.

Pour brown sugar from a bag into the hot water to dissolve.

Cover the pot and let the mixture steep for about 8 to 9 hours.

Remove the cover and strain the mixture through a sieve.

Add a quarter glass of Jamaican white rum to the strained liquid.

Taste the drink and adjust sweetness if necessary.

Serve the drink over ice.
