Bulgarian Pork Kavarma

Sprinkle in paprika and mix well to coat the meat.
Pour in red wine and let it simmer for 5 minutes to reduce slightly.
Add chopped tomatoes, carrots, and potatoes; stir to combine.
Season with salt and black pepper; add bay leaves and lemon juice.
Cover the pot and reduce heat to low; simmer for 1.5 to 2 hours until the pork is tender.
Check occasionally and add water if needed to prevent sticking.
Once cooked, remove bay leaves and stir in chopped parsley before serving.
