Activate yeast in warm milk for 5-10 minutes until frothy.
Mix flour, sugar, and salt in a large bowl.
Add activated yeast mixture, melted butter, and eggs to the dry ingredients.
Knead the dough on a floured surface for 8-10 minutes until smooth.
Let the dough rise in a warm place until doubled in size, about 1 hour.
Roll out the dough into a rectangle on a floured surface.
Spread shredded coconut evenly over the dough.
Roll the dough tightly into a log and slice into equal pieces.
Place rolls in a greased baking dish and let rise for another 30 minutes.
Preheat oven to 350°F (175°C).
Bake rolls for 20-25 minutes until golden brown.
Cool slightly before drizzling with powdered sugar icing.
