2 egg yolks
100g (3/4 cup) sugar
lemon (zest)
20g (1/4 cup) all-purpose flour
7 egg whites
a pinch of salt
butter for greasing
30ml (2 tbsp) milk
powdered sugar

In a bowl add the egg yolks, sugar, lemon (zest), and all-purpose flour and whisk until combined well.

In a mixing bowl add the egg whites, salt and gradually add the sugar and mix with the electric mixer until stiff.

Add the egg yolks to the egg whites and mix with a spatula being careful not to disassemble the egg whites, and combine the two mixtures.

Grease the baking dish with butter and pour in the milk. Use a dough cutter to create mountains with the mixture.

Transfer to the oven and bake at 200°C/392°F for 10-12 minutes. Once removed from the oven, decorate with powdered sugar and serve.
