1

Add white onion, red onion, and 1 clove of grated garlic to a pressure cooker with the pork skin.

2

Add a little salt and cook under pressure for about 20 minutes until tender.

3

In a skillet, heat some vegetable oil with achiote.

4

Sauté diced red onion and diced bell pepper until golden, then add white onion at the end to prevent burning.

5

Peel small potatoes and season with the sautéed mixture.

6

Add black pepper, a little cumin, and oregano to the potatoes and brown them slightly.

7

Remove the broth from the cooked pork skin, as it has a lot of flavor, and use it to cook the potatoes.

8

Cook the potatoes in the broth for about 20-25 minutes until soft.

9

Cut the cooked pork skin into small squares.

10

Blend 1 cup of milk with 3 heaping tablespoons of peanuts.

11

Once the potatoes are soft, add the chopped pork skin to the pot for flavor.

12

Pour in the peanut sauce, adjusting the amount of peanuts to taste.

13

Let it simmer until it thickens slightly from the peanuts.

14

At the end, add chopped cilantro and serve with avocado, chili pepper, and a portion of rice.
