Tapioca flour is essential for texture.
Mix 2 eggs with 1 cup of vegetable oil and 2 cups of milk in a large mixing bowl.
Use an electric mixer to mix for about 1 minute until well combined.
Add 4 cups of tapioca flour, 1.5 cups of grated Parmesan cheese, 0.5 cups of shredded mozzarella cheese, and 1 teaspoon of sea salt to the bowl.
Continue mixing with the electric mixer for another minute until everything is well incorporated and smooth.
Transfer the batter into a container or dispenser for portioning into the pan.
Spray a nonstick cooking spray over the muffin pan.
Fill each well of the pan with the batter, pouring only about half to 3/4 full to allow for blooming during baking.
Preheat the oven to 350°F (175°C).
Bake for about 25 to 30 minutes until they bloom and are golden.
Remove from the oven and enjoy.
