Bring 250ml of milk and 50ml of grapeseed oil to a boil in a medium pot.

In a large bowl, combine 1 cup of sweet tapioca starch, 2 cups of sour tapioca starch, and 0.5 teaspoon of salt. Mix and set aside.

Pour the hot milk and oil mixture over the starch and mix with a spatula.

Once cooled, knead the dough with your hands until well combined.

Add 3 eggs one at a time, mixing well after each addition.

Grate or process 300g of Canastra cheese or Havarti cheese and 70g of Parmesan cheese, then add to the dough and mix until incorporated.

Prepare a tray with parchment paper and shape the dough into balls, 40g for medium size and 20g for small size.

Place the dough balls on the tray, leaving about half an inch between them.

Bake at 375°F (190°C) for 25 minutes or until lightly golden.
