Bajiya

1 tuna can (425gm)
2 onions thinly sliced
1/2 tsp grated ginger
1/2 tsp grated garlic
2 tsp or 10 curry leaves
3 inch pandan leaves
Chilli to taste
3 inch piece of cinnamon
3 cardamom pods
3 tbsp sugar
1 tbsp chicken curry powder
1 tbsp curry powder
1/4 tsp turmeric
1 lime
2 tbsp oil
Salt
2 cups flour
1/2 cup warm water
3 tbsp oil
Salt to taste

In a bowl mix together the onions, chilli, garlic, ginger, curry leaves, tuna, chicken curry powder, curry powder, sugar and lime.

Add salt to taste.

Heat the oil in a pan and add the pandan leaf, cinnamon stick and cardamom pods. Cook until it’s a bit dry.

Once cooked, let the mixture cool down.

In a bowl mix the flour, oil and water and add salt to taste.

Knead the dough until soft.

Divide the dough into 14 equally sized balls.

Using a rolling pin roll the dough into circular shape.

Cook each side for a few seconds.

Cut each into 4 equal parts.

Make a paste using flour and water.

Fold the right side of the edge towards the center. Apply the flour paste over the edge and fold the left side towards center. It should look like a cone.

Place around 2 tsp of tuna mixture into the cone.

Apply the flour paste over the top edge and fold it in. Do seal the edges well. It should form a triangular shape.

Once all are done fry in batches in medium heat oil until golden brown.
