Whole wheat flour adds fiber and nutrients.
Add flour, granulated sugar, cinnamon, salt, and instant yeast into a stand mixer.
Melt butter and add it to the dry ingredients.
Pour in milk and add eggs to the mixture.
Knead the dough on medium high speed for about 6 minutes.
Divide the dough into 18 balls, each about 50 grams.
Roll the balls in your hands to make them smooth.
Cover the balls with cling wrap and a tea towel, and let them proof for 1 hour.
Prepare the caramel sauce while the dough is proofing.
Preheat the waffle iron and flatten the dough balls slightly before placing them in the iron.
Cook the waffles until golden brown, about 2-3 minutes.
Cut the waffles in half while still warm using a serrated knife.
Spread salted caramel sauce between the two halves and press together.
