Combine 250 g cake flour, 75 g brown sugar, and 2 g dry yeast in a bowl.
Melt 30 g butter in the microwave and set aside.
Add 30 g melted butter, 25 g eggs, and 125 g vanilla essence to the flour mixture and mix until a dough forms.
Knead the dough until smooth and let it rest in the fridge overnight.
For the filling, combine 425 g molasses, 100 g brown sugar, 40 g butter, and 1.5 g cinnamon powder in a saucepan.
Heat the filling mixture until it starts to boil, then remove from heat and let cool.
Take 55 g of dough for each stroopwafel and flatten it.
Use a waffle maker to cook the flattened dough until golden brown, about 2-3 minutes.
Remove the waffles and let them cool slightly before cutting them in half.
Spread the cooled filling between the two halves of the waffle and press together gently.
