Melt 2 tablespoons of butter in a pan.
Add a few cloves of garlic and 1 chopped onion, sauté until translucent.
Brown 1 kilogram of lamb shank on all sides in the pan.
Remove the lamb and add a little oil to the pan.
Add 1 sliced leek and 2 chopped carrots, stir to coat in the butter and oil.
Add 2 cubed potatoes and 1 cubed turnip or rutabaga, stir to combine.
Add 50 grams of brown rice to the vegetables.
Return the browned lamb to the pan and cover with 3 liters of water.
Bring to a boil, skimming off any foam that forms on top.
Add 1 tablespoon of salt, 1 teaspoon of black pepper, and a couple teaspoons of paprika.
Reduce heat and cover, simmer for 2 to 2.5 hours until the lamb is fork-tender.
