Egusi Ijebu Soup

Traditionally served at celebrations and gatherings, it showcases the use of melon seeds, which are ground to create a thick, flavorful soup. Blend egusi seeds until fine.
Heat palm oil in a pot over medium heat until hot.
Add chopped onions and sauté until translucent, about 3-4 minutes.
Stir in the blended egusi and cook for 5 minutes, stirring frequently.
Add diced beef and goat meat, stirring to combine.
Pour in water to cover the mixture and bring to a boil.
Reduce heat and simmer for 20-30 minutes until meats are tender.
Add stockfish and dried fish, cooking for an additional 10 minutes.
Stir in crayfish and chopped scotch bonnet peppers.
Add seasoning cubes and salt to taste, mixing well.
Incorporate bitter leaf and simmer for another 5 minutes.
Adjust consistency with more water if necessary.
Serve hot with pounded yam or rice.
