Preheat the oven to 350°F (175°C).

In the bowl of a KitchenAid stand mixer, combine 1/2 cup canola oil or vegetable oil, 1/2 cup softened unsalted butter, and 1 1/2 cups white granulated sugar. Beat until well combined.

Add 4 eggs one at a time, mixing on low speed after each addition. Ensure eggs are at room temperature.

In a separate bowl, whisk together 3 cups all-purpose flour, 1 tablespoon baking powder, and 1/2 teaspoon salt until well combined.

Add 1 1/4 cups buttermilk (also at room temperature) to the dry ingredients, alternating with the flour mixture. Start and end with the flour mixture, stirring until just combined after each addition. Avoid over-mixing.

Prepare the cake pans by cutting parchment paper to fit the bottom of each pan. Grease and flour the sides of the pans using Crisco and discard any excess flour.

Divide the batter evenly into two 8-inch cake pans, smoothing the surface with a spatula.

Bake in the preheated oven for 30 to 35 minutes, or until the cakes spring back when touched or a toothpick inserted comes out mostly clean with a few moist crumbs.

Let the cakes cool in the pans for about 10 minutes before inverting onto a cooling rack to cool completely. Remove the parchment paper once cooled.
