1 and 1/2 chopped green chili (or 2)
500 g chicken thighs
1 tsp cumin powder
1 and 1/2 tsp coriander powder
1/2 tsp chili powder
1/2 tsp garam masala
1 tsp amtur powder
1 tsp chili flakes
1/2 tsp freshly ground black pepper powder
1 tsp salt
2 tsp lemon juice
1/2 cup yogurt

Melt 1 tbsp of butter in the microwave and add 1/4 tsp of saffron, swirl and set aside.

Coarsely chop 1 medium onion and blend it into a smooth puree.

Line a medium bowl with muslin cloth or a sieve and drain the juices from the pureed onion, keeping the pulp aside.

In the same blender, combine 1/4 cup fresh mint leaves, 1/3 cup fresh coriander leaves, 4 garlic cloves, 2-inch piece of chopped ginger, and 1 and 1/2 chopped green chili (or 2) and blitz until chopped.

Add 500 g of minced chicken thighs to a medium bowl.

Add 1 tsp cumin powder, 1 and 1/2 tsp coriander powder, 1/2 tsp chili powder, 1/2 tsp garam masala, 1 tsp amtur powder, 1 tsp chili flakes, 1/2 tsp black pepper powder, and 1 tsp salt to the chicken.

Add the onion pulp and saffron butter to the chicken mixture and mix for 8 to 10 minutes until smooth and slightly stringy.

Cover the mixture and refrigerate for 1-2 hours or overnight.

Prepare a green chutney by blending 2 garlic cloves, 1/2 inch of ginger, 1/2 green chili, 1 cup fresh mint leaves, 1/2 cup fresh coriander, 1 tsp cumin powder, 1/2 tsp chaat masala, 2 tsp lemon juice, 1/2 cup yogurt, and 1/8 tsp salt until smooth.

Preheat the oven to 400°F (200°C).

Divide the mixture into six equal portions and shape them onto metal skewers, ensuring the mixture is firm when shaping.

Place the formed kebabs on a sheet pan lined with aluminum foil.

Bake the kebabs in the oven for approximately 24 to 25 minutes, flipping halfway through.

Broil the kebabs for 2 minutes on each side for a golden finish.

Let the kebabs rest for a minute before sliding them off the skewers.

Brush the drippings from the sheet pan on top of the kebabs before serving.
