Originating from Saint Lucia, Bakes are a beloved Caribbean snack or meal, often enjoyed with fish or as a side dish. Traditionally, they are a staple at gatherings and celebrations, symbolizing community and sharing. Today, variations can be found throughout the Caribbean, with different fillings and cooking methods, showcasing the region's rich culinary diversity.

Grilled chicken offers a leaner protein option, while canned tuna is budget-friendly.

Olive oil is a healthier fat choice, while margarine is often less expensive.
Add the sugar, salt, and yeast to the flour and mix well.
Add the vegetable oil to the flour mixture.
Slowly add warm water little by little to form the dough, mixing as you go.
After a few minutes, the dough should start to come together.
Continue to lightly knead the dough for another 5 minutes until it is smooth and elastic.
Make a hole in the center of the dough with your finger (optional).
Cover the dough with plastic wrap and a tea towel, or just a tea towel, and place it in a warm area to rise until doubled in size (about 50 minutes, but may vary).
Once doubled, press down on the dough to release air.
Take small pieces of dough to form the bakes, pulling the edges towards the center in a pinching motion to form a ball.
Cover the formed balls with plastic wrap and a tea towel and let them rise again for 10 to 15 minutes.
Heat oil in a frying pan over low heat.
Carefully add the balls of dough to the pan to fry.
Fry until golden brown on one side, then carefully turn them to fry the other side.
Once golden brown on both sides, turn the bakes on their white edges to ensure they are fully cooked through.
When fully cooked and golden brown on all sides, remove the bakes and place them on a plate lined with paper towel to absorb excess oil.
