Cultural Context

Guyanese Bakes are a beloved snack or side dish in Guyana, often enjoyed with various fillings or dips. Traditionally, they are made for breakfast or as a treat during gatherings. These fried dough discs are a staple in Guyanese cuisine, showcasing the influence of both indigenous and colonial culinary practices. Today, they are enjoyed by many, both in Guyana and among the diaspora, often served alongside curries or stews.

coconut milk

🥗Healthier: almond milk

💰Cheaper: water + coconut extract

Almond milk reduces calories while maintaining a creamy texture.

butter

🥗Healthier: olive oil

💰Cheaper: margarine

Olive oil is healthier and can be used for frying.

1

Dissolve 1/2 cup of brown sugar in 1 cup of warm water and mix until all sugar crystals dissolve, then set aside.

2

In a large mixing bowl, add 3 cups of flour, 2 teaspoons of baking powder, and a pinch of salt.

3

Add 1 tablespoon of coconut oil (or butter/ghee/regular oil) and rub it into the flour.

4

Make a well in the center of the bowl and add the sugar water solution, mixing everything together to form a soft dough.

5

If the dough is too sticky, add a little more flour, but keep it soft.

6

Knead the dough for about 5 minutes until it forms a smooth ball, then cover with a kitchen towel and let it rest for about 30 minutes.

7

Turn the dough onto a floured surface and roll it out to about an eighth of an inch thick.

8

Cut the dough into 12 equal pieces using a cookie cutter or round object.

9

Form any excess dough into a ball, roll it out, and cut it again to avoid waste.

10

Heat 4 cups of oil in a large frying pan or wok over medium heat until hot.

11

Add a few bakes to the pan, frying 3-4 at a time if possible, or just one if you're not comfortable.

12

Cook each bake for about 1-1.5 minutes on one side until golden brown, then flip and cook for another 30 seconds to 1 minute on the other side.

13

For even browning, flip the bake twice, cooking for 30 seconds on each side until golden brown.

14

Remove the bakes from the oil and place them in a bowl lined with paper towels to drain excess oil.
