Start by preparing the dough for the goja.
In a bowl, combine 2 cups of all-purpose flour, 1 teaspoon of baking powder, 1/4 teaspoon of salt, and 1/2 teaspoon of cinnamon.
Add 2 tablespoons of canola oil to the dry ingredients and mix with clean fingers.
Gradually add 1/2 cup of room temperature water while mixing to form a dough.
Knead the dough gently until smooth, but do not over-knead.
Cover the dough with a damp paper towel and set aside to rest.
For the filling, use 2 cups of freshly grated coconut in a pan over medium heat.
Cook the coconut to remove some of its rawness, stirring frequently to prevent burning.
Add 1 tablespoon of freshly grated ginger to the coconut and mix well.
Add 1/4 teaspoon of nutmeg and stir to combine.
Add sugar to taste and mix in 1/4 cup of condensed milk.
Finally, add red food coloring to achieve the desired color, mixing well to incorporate it into the filling.
