1

In a bowl, combine 2 tablespoons of butter, 1 tablespoon of baking powder, and 1 tablespoon of instant yeast.

2

Mix the ingredients together until well combined.

3

Create a well in the center of the mixture and gradually add 1/2 cup of warm water, mixing until a dough forms.

4

Knead the dough for about 1 minute until it reaches a non-sticky texture, resembling a saddle roti texture.

5

Cover the dough with a damp paper towel to prevent it from drying out.

6

In a heavy-bottomed pot, add 1 cup of freshly grated coconut and parch it over medium-high heat until it turns a light golden brown.

7

Add 1/2 teaspoon of nutmeg, 1/2 teaspoon of salt, 1 tablespoon of orange powder, and 1 tablespoon of freshly grated ginger to the coconut and mix well.

8

After about 5 minutes, add 1/2 cup of sugar and food coloring to the coconut mixture, stirring until combined.

9

Add 1 tablespoon of water at a time to help melt the sugar, ensuring no syrup remains at the bottom of the pot.

10

Once the sugar is melted and the mixture is well combined, remove it from heat and let it cool down.

11

Turn out the dough onto a floured surface and divide it into 14 equal pieces.

12

Flatten one piece of dough and roll it out as thin as possible.

13

Use 1 teaspoon of the coconut filling and place it in the center of the rolled dough.

14

Dab the edges of the dough with water and fold it over to seal, pressing out any air.

15

Use a fork to press the edges to ensure they are sealed properly.

16

Repeat the process for the remaining pieces of dough and filling.

17

Heat oil in a pan until it reaches a hot temperature, indicated by fine bubbles on the edge of a spoon.

18

Reduce heat to medium-low and gently add the filled gojas to the hot oil, frying them until they rise to the top and turn a light golden brown.
